Delicious 10 Minute Vegan Tofu Scramble

There are so many things I love about this dish! First, it's fast, coming in at under 10 minutes, easy, full of flavor, and packed with protein and other phytonutrients. It also calls for my daily dose of Turmeric which, in my case, is key to helping me keep my blood pressure in check without the use of medication. I guarantee you won't miss the eggs! Have it for breakfast, lunch, or dinner Mmmmm delish!


1 12 ounce package of firm Tofu

1 tablespoon of Turmeric

1 bag of fresh baby spinach leaves

1 chopped medium onion

1 vegetable bouillon cubes

1 tablespoon of olive oil


Press water from tofu and crumble it in a bowl, saute onion in olive oil over medium high heat, add tofu. Dissolve vegetable bouillon and Turmeric in 1/4 cup of water and pour over tofu. Add spinach and saute for 1 minute just until wilted. Season with black pepper or crushed red pepper flakes and enjoy!
