My 10 Minute "Knock-Your-Socks-Off" RAW Vegan Key Lime Pie!

O-M-GATOS GUYS!!!!

This has got to be the greatest dessert since sweet treats were invented! You guys all know that I'm "raw vegan", but I'm here to show you that this is one of the reasons I'm so enjoying this side of life! Check it out for yourselves and see if it doesn't make a believer out of you as it rivals any baked version out there!

 

Ingredients:

2 medium sized ripe avocados

1/4 cup coconut cream

Juice of 3 medium sized limes (1/4 cup)

1/4 cup agave nectar or 100% maple syrup

1/4 cup coconut oil

1 teaspoon vanilla

1/2 teaspoon sea salt

Directions:

Place above ingredients in blender and blend until smooth. Pour into raw or prepared gluten-free crust.

***Raw Crust Recipe

1 cup raw almonds

1/2 cup shredded coconut

1/4 cup soaked pitted dates

Blend until it forms a ball and press into pie plate, pour in key lime mixture and freeze until set. Thaw slightly, slice, and serve with dairy-free whipped cream and enjoy!
